The last time I went up to Michigan to visit my sister she took me to a little coffee shop that serves smoothies, paninis and little desserts. We both ordered smoothies and promised to go back for lunch. My mango smoothie was outstanding. I decided that I had to go out and pick up a mango or two and start baking with them. I made a good first choice. I hope you like these Mango Citrus Muffins from Betty Crocker as much as I did.
A few weeks ago I went over to the grocery store in search of the perfect mango. Once I got there and was faced with a heap of mangos I realized I had no idea how to choose a ripe one. So if you know how please let me know. At the time I just made an uneducated guess and moved on.
This recipe has you add all of your normal muffin ingredients and then you get to spice things up a bit. Besides adding in almost a whole mango diced up, you also add in the zest of almost one whole lime. The kitchen smelled so good and the rest of the morning my fingers smelled of citrus. It really puts some pep in your step.
While the mango muffins are baking you use the juice of the lime and mix it with confectioners' sugar to make a delicious glaze that you drizzle over the muffins when they are done.
This is a splendid treat for breakfast, or brunch, or even an afternoon snack.
