Warm Peanut Butter Pudding

I made this in the middle of June and I have no idea what I was thinking.  This is definitely a winter dessert.  Best served while watching a crackling fire or when you've just come inside from a cold snowy day.

This Warm Peanut Butter Pudding is so simple and very quick. All you have to do is whip up a batch of instant chocolate pudding and then put a dollop of peanut butter on top.  

Pop it into the microwave until it melts a bit.  Take it out and serve it hot with a dollop of whip cream.  Its like eating a warm Reese's peanut butter cup.

Chocolate Peanut Butter Brownies

 

This week I baked Chocolate Peanut Butter Brownies from Taste of Home.  You actually start out by making brownies from scratch.  I never knew they were this simple.  It took literally less than three minutes. Okay, five minutes tops!  

While they bake in the oven you start on the peanut butter frosting layer.  You mix up peanut butter, powdered sugar, and butter. Milk is then added about a tablespoon at a time to thin it out to a spreading consistency.  

The recipe calls for baking chocolate mixed with butter melted together for a final drizzle over the finished product.  I was in too much of a hurry to try these out (they smell amazing!) so I just got some Hershey's Chocolate Syrup and drizzled that on top.  Plus I still don't have sweetened baking chocolate in the house just unsweetened.

Anywhoo, after you have all your layers done you just pop it into the refrigerator to chill and then you can cut up your squares.  

Did I mention how amazing these things turn out! The brownie is nice and chewy and the peanut butter frosting is not too rich.  Just typing this makes me want to go bake another batch.  

I packed Michael three squares to take into work for himself and his co-worker.  They raved about them.  When I woke up the next morning half the pan was gone.  I'm pretty sure these didn't make it to lunch time in the office.

No Bake Cookies

This is Day #2 of being snowed in.  It has been nice because even Michael gets to stay home from work.  That's been nice for me because I get an extra set of hands with the daily chores and with Murphy Man.  

I got done early with the chores for today and did my baking in the middle of the afternoon instead of having to wait until the evening during Michael's "Mensday" (he's got a hockey game tonight).  

This week's recipe was for No Bake Cookies from over at Eat at Home.  When you get a chance you should go over and check out her recipes.  I made her Broccoli Soup yesterday and it was delicious.

I got everything together and realized that I didn't have any wax paper to let them set-up on.  I greased down a few cookie sheets and just left it at that. 

It takes a while for them to set-up but when they are done they taste heavenly.  I snagged a cookie before they were completely done anyway.  

It reminds me of when I was a little girl and would go visit my parents' friends down in Myrtle Beach.  Auntie Bernice would have these sitting out on her sideboard (or buffet for all you who aren't my mother).  Then I could just grab one every time I walked by from the family room to the bedroom and back again.  

They are so simple to make and it makes the whole house smell like cocoa and peanut butter. And yes, you can start this recipe with a stick of butter!  Yeah Me!
