Lemon Blueberry Pizza

 This will be my last week for my blueberry bonanza.  I've loved this so much.  I started looking around for another blueberry recipe and found this awesome sugar cookie pizza to make.  It reminds me of the chocolate chip cookie pizza that my mother-in-law makes.  She uses melted chocolate and she tops it with chopped up pieces of candy bars.  It is so chocolatey and delicious!

First you spread sugar cookie over an ungreased cookie sheet.

Whip up softened cream cheese with sugar, and lemon pudding mix. 

I wanted it to taste extra lemony so I added a little bit of real lemon extract. I think that adding a bit of lemon zest and real lemon juice would add an absolutely amazing kick.

Spread this mixture overtop of the baked sugar cookie.

 

Top with blueberries and put in the refrigerator.

While I was staring my husband down as he taste tested my newest dessert I thought that adding dollops of real whipped cream would be the best finishing touch!
