Guest Post: Easy Strawberry Pie

Today I have the first in a group of guests to make this Fruit Festival even more special.

Gosh, every time I go to the grocery store, there's been a big rack of really ripe or molding strawberries for a ridiculous price that I can't resist. I buy them, bring them home, wash and cut them and stick them in the freezer. Today the freezer needed cleaning out so I made this super easy Strawberry Pie.

Ingredients:
1 cup sugar
3 Tablespoons Cornstarch
1 Cup Water
3 Tablespoons strawberry-flavored gelatin powder
4 cups strawberries
1 pie shell (9-inch) baked
Whipped Cream


Directions:
Mix the sugar, cornstarch and water in saucepan, stir constantly, cooking until thickened.

Remove from heat, stir in gelatin until dissolved.

Pour over strawberries, mix well.

Pour mixture into pie shell, refrigerate until set.

Top with whipping cream or topping.

Makes 6-8 servings!
