I have pumpkin!


I made pumpkin cookies and they turned out delicious!

I've been waiting and waiting to make these pumpkin cookies from Betty Crocker.  This book has quite a few really good cookie recipes in it.  The Betty Crocker book Cookies Cookies.  It contains some wonderful recipes as well.


This recipe was so easy and quick to make.  The recipe calls for cinnamon, nutmeg, and allspice.  I could not believe my eyes when I looked in my lazy Susan and only found cinnamon.  


Was I doomed to have nasty cookies?  

Nope! 

They still turned out but next time I will make sure to have all the spices in it.  


Once I added all the other ingredients to the mixer it turns out like a cake batter.  When you spoon them out onto your cookie pan make sure you keep them small and spread them out a little bit.  They end up rather high and fluffy and taste a little gooey.  In the end they flatten out and taste amazing.  


One recipe calls for adding vanilla icing and another says to leave them plain.  I shook confectioners' sugar over half of them and it was delicious.  The other half I left plain and we gobbled them up just as fast.
